The Riviera’s signature style
The speciality dishes of the Côte d’Azur are typically seasoned with beautiful bundles of herbs. Better known as Herbes de Provence, these plants grow in abundance across the Mediterranean. Marjoram, rosemary, thyme, and oregano add flavour to ratatouilles. This dish used to be considered a peasant dish, but is now well-loved across the world. Locals cook moules marinière with the freshest catch from the port of Marseille.
Head to the market
You’ll find Herbes de Provence are abundant in Riviera cuisine. They are available in markets all around France, alongside great bunches of lavender, loaves of French bread and wheels of cheese. Other famous produce includes olives, capers, garlic, Dijon mustard, fresh eggs and juicy lemons. These are all the ingredients you need to make our famous tapenade and rich aioli.
A French table is never bare
Aioli is a tasty sandwich spread or an excellent dip for fries. It originated in the south of France and it remains a French staple today. Used as a sauce to complement many regional dishes, it also denotes a dish of boiled vegetables, poached fish and hard-boiled eggs, brought together by the signature homemade sauce. Tapenade is another French table essential. This spread, concocted of our famous Mediterranean olives, capers, anchovies and olive oil, is delicious on grilled bread as an entrée or snack.
